Healthy Granola Recipe with Pecans and Coconut

This crunchy whole-grain granola can be made healthier and more affordably than the kind you buy in the store. The crispy combo of whole-grain oats and buttery pecans is a fiber-filled way to satisfy a sweet tooth while getting some nutrients at the same time. Fiber is especially great during pregnancy to help you avoid constipation, maintain a healthy weight, and improve digestion and blood sugar levels.

For a satisfying and healthy snack or breakfast, sprinkle this granola over a calcium-rich yogurt bowl along with fresh fruit.

This recipe is: vegetarian, dairy free (without the optional yogurt)

Start to finish: 30 minutes

Serves: 16 (makes 4 cups, ¼ cup per serving)

Ingredients:

  • 3 cups rolled oats*
  • 1 cup pecans
  • 1 cup shredded sweetened coconut
  • ¼ cup honey
  • ¼ cup canola or vegetable oil
  • 1 teaspoon cinnamon
  • ½ teaspoon kosher salt
  • Zest of 1 orange (optional)*
  • Yogurt* and fresh fruit* (optional, for serving)

Preheat the oven to 300 F. Line a large baking sheet with parchment paper or grease the baking sheet with cooking spray.

To a food processor, add the oats, pecans, coconut, honey, oil, cinnamon, kosher salt, and orange zest (if using). Pulse to combine. If you don’t have a food processor, use a knife and cutting board to rough chop the ingredients.

Pour the mixture out onto your prepared baking sheet. Transfer to the oven and bake for about 15 minutes until golden, stirring the granola occasionally.

Remove from the oven and set aside to cool completely before snacking or serving. If you like, serve with yogurt and berries.

Note: You can store leftover granola in an airtight container for up to 1 week.
